Winter Storage – Black Sesame Recipes

Nourishing in Winter with Black Sesame: Three Therapeutic Recipes
According to Traditional Chinese Medicine, winter is the season of “storage,” where the Kidney Qi should be preserved and nourished. For this purpose, I’d like to recommend three medicinal food recipes based on black sesame seeds—a traditional tonic with wide-ranging health benefits.
Health Benefits of Black Sesame:
In TCM, black sesame, also known as zhi ma or hu ma, is considered a superior food. As recorded in the Shennong Bencao Jing (Divine Farmer’s Classic of Materia Medica):
“Hu ma is sweet and thermally neutral, non-toxic, and enters the Liver, Kidney, and Large Intestine channels. It treats deficiency and emaciation, strengthens the internal organs, replenishes Qi and strength, grows muscle, nourishes brain marrow, and promotes longevity with long-term use.”
From both modern nutrition and TCM perspectives, black sesame is rich in protein, healthy fats, calcium, iron, dietary fiber, and antioxidants. It can:
1. Tonify the Liver and Kidney, Nourish Blood and Essence: Useful for symptoms such as dizziness, lower back soreness, and knee weakness.
2. Moisten the Intestines and Relieve Constipation: High fiber and fat content promotes healthy digestion.
3. Darken Hair and Prevent Hair Loss: Rich in iron and B vitamins that nourish the scalp and hair follicles.
4. Support Cardiovascular Health: Contains unsaturated fatty acids and lecithin that help reduce cholesterol and maintain vascular elasticity.
5. Prevent Anemia: High iron content supports healthy hemoglobin levels.
6. Strengthen Bones and Teeth: Abundant in calcium, essential for bone health.
7. Improve Sleep Quality: Magnesium and calcium help relax the nervous system and promote restful sleep.
8. Boost Immunity: Rich in zinc and trace elements that modulate immune function.
He Shou Wu & Black Sesame Balls
Ingredients for Herbal Base:
He Shou Wu (Polygonum multiflorum) – 30g
Mulberries – 20g
Chuanxiong (Ligusticum) – 6g
Shu Di Huang (Prepared Rehmannia) – 30g
Chen Pi (Dried Tangerine Peel) – 5g
Soak all herbs in 500ml water for 30 minutes, then bring to a boil. Reduce to medium-low heat and simmer until liquid is reduced by about half to 250ml (about 1 hour). Strain and reserve the herbal extract.
Note: These herbs are all Kidney and Blood supplementing and synergize well with black sesame for a more potent therapeutic effect. As with any TCM-based recipe, attention must be paid to the nature, taste, and meridian associations of the ingredients, and random mixing can negatively affect both taste and efficacy.
Additional Ingredients:
Red dates (seeded and chopped) – 200g
Black sesame seeds – 500g (lightly roasted and ground until oil begins to release)
Walnuts – 200g (roasted and chopped, leaving some texture)
Honey – to taste
Coconut oil – a small amount (as binder and flavor enhancer)
A dash of fresh lemon juice
Instructions:
1. Cook the herbal extract with honey until it thickens slightly and bubbles appear. Add a bit of lemon juice and coconut oil.
2. Mix in the chopped walnuts, red dates, and ground sesame seeds. Stir well until the mixture forms a cohesive dough that doesn’t stick to the hands.
3. Form into balls of your preferred size. Roll in shredded coconut. Refrigerate for at least an hour before individually wrapping.
4. Enjoy 2–3 pieces per day as a healthy snack or herbal supplement. Delicious and pleasantly mild in herbal flavor.

Creamy Almond & Black Sesame sweet congee
Ingredients:
Roasted black sesame – 250g
Sweet or bitter almonds – 30g
Roasted black glutinous rice (or purple rice) – 50g
Instructions:
1. Blend all ingredients with 1000ml water using a high-speed blender (e.g., Vitamix). Add a spoonful of coconut oil and some rock sugar to taste. If using a regular blender, blend in batches and strain the mixture through a fine mesh sieve or cheesecloth 2–3 times.
2. Transfer the strained liquid to a saucepan. Cook over medium heat, stirring constantly to avoid burning. The porridge will thicken as it cooks.
3. Once it begins to boil, reduce heat and simmer for 5 more minutes. Adjust sweetness if necessary, or add a bit of water if too thick.
4. Serve warm.
This sesame-almond congee is not only nourishing for the Kidneys and Liver but also benefits the Lungs and Spleen. Ideal as a breakfast or late-night snack. A beautifying tonic that also supports digestion and skin health.

Black Sesame & Brown Sugar Oat Mantou (Steamed Buns)
Don’t discard the leftover sesame-rice pulp from the congee above—it makes an excellent base for nutritious buns.
Ingredients:
Leftover sesame pulp
Warm milk – 250ml
Brown sugar – to taste
Yeast – 5g
Oat flour (ground oats) – 200g
Bread flour – 300g
Aluminum-free baking powder – 5g
Cooking oil – 1 tbsp
Instructions:
1. Mix all ingredients into a dough. Let rise until doubled in size.
2. Shape into small buns and steam until cooked through.
3. Optionally, fill with red date paste or sweet bean paste for a richer treat.
Soft, fragrant, and full of nutrients—these buns are perfect for breakfast or as a snack for kids and adults alike.

冬藏-黑芝麻食譜

黑芝麻的功效包括補益肝腎,潤腸通便,烏髮,加強記憶力,抗氧化和保護心血管健康。富含蛋白質,脂肪,鈣,鐵,和膳食纖維等,有助改善便秘,貧血,骨骼健康,延緩衰老。從中醫的角度來說,黑芝麻又叫脂麻,胡麻,歷來被視為養生佳品。《神農本草經》:”胡麻甘,平,無毒,入肝,腎,大腸經。入主傷中虛羸,補五內,益氣力,長肌肉,填腦髓,久服輕身不老。”

首烏芝麻丸
1藥方:何首烏30克,桑椹20克,川芎6克,熟地黃30克,陳皮5克,全部藥材用500毫升水浸泡半小時後,大火煮開轉中小火,煮成250毫升濃縮藥液,大概需要一小時。瀝出藥液備用。(何首烏,桑椹,熟地等藥材都補血補腎,和黑芝麻歸經性味相像,因此一併加入,以增加食療功效。食療的一大原則,和配伍方劑相通,必須講究歸經性味和君臣佐使,要考慮藥材的口感和味道,切記胡亂混搭,影響食用愉悅感和幸福感,更影響整體的療效。)
2 紅棗200克,洗淨,去核剪碎。
3 黑芝麻500克,小火炒熟,用攪拌器或者破壁機打碎至微微出油。
4 核桃200克,炒熟或者烤箱烤熟後放涼,切碎。保留一定顆粒感。
4 蜜糖適量,椰子油少許。椰子油作為粘合劑,也能增加芝麻丸的風味。
做法:藥液加入蜜糖熬製成稍粘稠(冒小泡泡)糖漿後加入少許鮮榨檸檬汁後關火,加入少量椰子油混合均勻。把核桃碎,紅棗碎,黑芝麻,都倒入藥材糖漿中,繼續混合翻炒直至成團,可以抓捏成團,不粘手為度。新手,建議把糖漿往幹料裏面慢慢倒入,邊倒邊拌,如果不夠濕,就多熬一點糖漿。一般容易犯的錯誤是太稀,這樣就沒辦法搓丸子了。
把材料搓成自己喜歡的大小,在椰絲裏面滾一下粘上椰絲,再放在盤子裏冷藏大概一小時以上,就可以獨立包裝,食用時單獨拿出來就可以。香甜可口,藥味不明顯。即可以當成小食,也可以作為食療。每日兩丸到三丸即可。

香滑杏仁黑芝麻糊
原材料:炒熟黑芝麻半斤,南杏仁或者北杏仁30克,黑糯米或者紫米50克,炒熟。
做法:三種原料,加1000毫升水,用破壁機打碎,如果是破壁機,就可以直接加入冰糖適量,椰子油一茶匙,煮熟食用。如果是料理機,比如攪拌機,打碎後要篩網過濾兩次。因此1000毫升的水可以分兩次加。隔離出來的渣渣,放回去攪拌機裏,加水再攪拌,再過篩,得到細膩的懸液。這個和做豆漿原理差不多。
將過濾好的懸浮液,倒進鍋裏,開火煮,一定要邊攪拌邊煮,不要離開灶台,以免糊底或者溢出。芝麻糊會越煮越粘稠,沸騰後小火再煮五分鐘就可以關火了。不夠甜的可以加冰糖。萬一太粘稠,就加入少許水。繼續攪拌,煮開。享用。
這款芝麻糊由於用到了杏仁,黑糯米等食材,益肺潤腸健脾的功效比單純的芝麻糊要強。非常適合作為早餐,或者夜宵食用。潤膚美顏佳品。

黑芝麻紅糖燕麥小饅頭
過濾後的芝麻糯米渣渣,可以利用來做小饅頭。
黑芝麻渣渣,加入溫牛奶250克,紅糖少許,酵母五克,燕麥粉(燕麥打碎)200克,高筋麵粉300克,無鋁泡打粉5克,食用油一湯匙。混合均勻麵團,發酵至兩倍大,常規做法做成小饅頭,上屜蒸熟。香甜可口,營養豐富。如果希望有內餡,可包入棗泥或者豆沙。
